Fresh Mango Salsa

I love salsa wether it's made with tomatoes, cucumber or better yet one of my absolute favorite fruit mango. Salsa is a healthy yet refreshing way to relaxed on a hot summer day with friends and family and eat yourself silly without all the gilt, that is if your pallet can take the jalapeño pepper. Sharing with you my zesty mango salsa.

4 lg.- Mangos diced med chunks
1/3- Red onion diced into sm. chunks
1/2- Red bell pepper diced med chunks
1 med.- jalapeño diced into sm. chunks
1/4- bunch fresh cilantro chopped finely
1 lg- lime fist grater lime zest and add to recipe
1/3- cup lime juice
1/3- fresh grated ginger
Combine all ingredients to a large bowl fold lit sit for about an hour, grab yourself some vegan white bean chip and dig in.
