Kale Salad

Kale is one of my favorite greens, not only it delicious, low in calorie, high in fiber it has zero fat. Kale is high in iron, vitamin k, antioxidant, a great anti-inflammatory, high in vitamin c,a and high in calcium it's also a great detox food, with its high fiber and sulfur content both are great for detoxifying your body and keeping your liver healthy.

Ingredients:
1-bunch kale chopped into small pieces
2-oranges peeled
1-apple chopped into match sticks pieces
1/2 cup chopped pistachio nuts
1-persimmon  tomatoe, slice
1/2-cup rice wine
1-tbsp orange juice
1-tsp Dijon mustard
1-tsp orange zest
1-tsp ground cummin
1/4-tsp red pepper flakes
1/3-cup olive oil 
Salt and pepper to taste
Combine kale, sliced oranges, tomatoes, pistachio nuts and match sticks apple to a lage bowl. Blend rice wine vinger, orange juice, olive oil, cummin, red paper flakes, Dijon mustard, salt and pepper to taste. Let sit for 1hr. Pour over salad and let sit overnight this will soften the kale leaves a little making a lot easier to chew and digest faster.
